Now, I’ve spent a fair amount of time in the food industry, and while I’m no metallurgist I can’t get over the quality of Japanese steel. Kyoku’s Daimyo series is unparalleled in the construction of their cutlery, and this steak knife set is no different.

While not as traditionally elegant as a wooden-handled knife, this set uses a patterned G10 fiberglass-reinforced polymer handle. A more modern material you will also find in high-quality combat knives.

The blade itself, VG10 Japanese 33-layer Damascus steel. While already a superior super-steel, this knife is also cryogenically frozen. This brings all the atoms in the steel closer together, allowing the blade to maintain its edge longer than most steels and just making it incredibly durable.

Besides the Japanese, the German’s are also well renowned for their quality engineering, and also for their steel. So it comes as no surprise you’ll find that many celebrity chefs use Wüsthof cutlery in their knife bags.

Steak Knives Buyers Guide

Steak knives can be quite varied if even their function is the same. They can be serrated or non-serrated, straight or curved, forked or not, artwork or bland. It is really up to you gastronomic preference.

For myself, as a person from the culinary field, I have to say that the cutlery used when hosting guests or family is an equal part of the experience.

A choice steak such as a bone-in rib-eye perfectly cooked to a medium-rare and beautifully plated and served is somehow robbed when set next to a cheap plastic-handled knife.

Most restaurants survive on an extremely thing profit margin, generally less than 3% for most mom-and-pop places. So while managing “shrinkage” by saving time of maintaining fine cutlery and theft is absolutely essential, for foodies and those who love to host their friends, not so much.

To me, something you shouldn’t cheap out on.

So today, I have decided to target the poor, overlooked steak knife.

When it Comes to Steak Knives you Get Two Choices:

So in the world of steak knives, you don’t really have a lot of options when it comes to the blade. In fact, you only get two.

  • Serrated blades, with features blades with a scalloped edge. The scalloped edging lets the blade saw through what ever it is cutting. Scalloped blades are useful for cutting soft things, such as bread, since the sawing action the blade allows won’t crush the delicate bread.
  • Straight blades, which are less common to find in a store or restaurant setting. These blades are exactly what their namesake states, a straight blade lacking the scalloping of a serrated blade.

Both of these knives have their advantages. The serrated knives will be able to cut well for longer periods between sharpening, but if not properly sharpened often, they will eventually require more force to cut, crushing the lovely delicious juices out of a steak.

The sawing action doesn’t cut as cleanly as a straight knife either, meaning that even if the blade is brand-new out-of-the-box sharp it will still release more of the fluids than a straight-edged knife.

Unless you have a good amount of experience sharpening a serrated knife, these will prove very difficult for the average homeowner to maintain. They require special tools most people simply don’t own. So for most, once they are dull, they are dull.

Straight-edged knives are much easier to sharpen and most people have a knife sharpener of some kind around the house that will easily be able to use to maintain the blade’s sharpness.

They also make very smooth cuts, leaving more of the steak intact. These are a more popular choice for people who love steak.

Final Thoughts

Remember, much of the joy that comes with the experience of good food is simply the experience. There is a reason that in the industry the saying exists, “people tastes with their eyes.” This isn’t just true for the appearance of the plating, but also the cutlery.

However, it should go without saying with good looks don’t matter if it doesn’t work, and the same goes for your choice of cutlery.

That being said, all knives, regardless of being table knives or not should be hand washed. This maintains the integrity of the steel and handles for a much, much longer time than machine washing.
